I'M BAAACCCKKKK [with your promised "3 week" update"]. This week was a lot better in terms of meals, shopping, finding new snacks, etc. I'm definitely feeling like I'm getting over the "yucky" first couple of weeks [pimples, being tired, weird bowel movements] and I'm moving into just feeling BETTER.
This past week, I planned a few meals based off of things we already had at home.
T- Pork chops, corn on the cob
W- Spaghetti w/ mushroom sauce
R- Meatloaf, veggies
F- [we grilled at my brother's - pork chops, corn on the cob, green beans]
S- Tacos
I think the meal I was most excited about/impressed with was the meatloaf! We made just a normal meatloaf recipe, but substituted GF crackers for the grain. It turned out really yummy! As you can see in this pictures, a go-to for us this week was frozen bags of mixed veggies that we got at Sam's club. It made picking sides easy!

Friday, I went grocery chopping for the next two weeks of meals. Again, I went through what we already had, read through recipes, etc. to put togther our meal plan. Here's what I came up with:
S2- Chicken fried rice [we were having guests]
M3- One pot pasta
T4- Chicken chili
W5- LEFT OVERS
R6 - Tacos, rice
F7- Breakfast for dinner
Sa8- Lasagna, salad
S9- Chicken, potatoes
M10- Pork chops, veggies
T11- Tilapia, veggies
W12- LEFT OVERS
R13- OUT w/ Ben [for my birthday!!]
F14- OUT w/ family [for my birthday again!!]
S15- Orance chicken, rice
Once I got the recipes and menus together, I went to the store. As you look at these pictures, I ask that you cut us some slack - while I am eating GF, my husband only does so part of the time to support me. I still buy him other things that he enjoys eating. I ended up getting everything pictured below for $87.14 at Hyvee (+29 cents fuel savers).
This was also a month that we needed to go to Sam's Club to stock up on some things [ie. chicken breast, milk, yogurt, beer, spinach leaves, and a few other things], so we did that yesterday and spent $96. When we got home we reorganized the freezer and we should be stocked on protein for the rest of the month [and probably a little longer]. Today's shopping trip was more about readjusting our grocery budget to include things to eat for lunch during the school year. Getting things like yogurt, lunch meat, fruit, etc. Pictured below you can check out Ben reorganizing the frozen food in our house and a picture of my new favorite snack - whipped yogurt! YUM!
As per usual, here are my progress photos. I'm definitely noticing my spots drying out [in a good way] and my hands and feet starting to clear a little bit! I've lost 5.5 pounds total since cutting gluten!
