Well guys, it has been four weeks since I cut gluten! This last week was a rough one, I would say. While we did find a few delicious recipes to try [pictured below], I also went back to work, so that brought on a brand new set of challenges. First a little bit about the recipes:
The top two pictures show a "One-Pot Pasta" recipe I found that I just subbed GF pasta into. We realllllyyyyyy loved this one the night we made it + it was SO easy. The downfall, we've found, to GF pasta is that it doesn't keep/reheat very well. Alas, we will probably make it again.

The second recipe that we tried was a simple Chicken Chili recipe I found. It came together really nicely! The recipe calls for chicken, and we ended up using a rotisserie chicken to make that night a little easier. I think it could be done in the crock pot with frozen breasts easily.
We also had breakfast for dinner one night this past week. Ben made GF biscuits and gravy from scratch [his regular recipe + GF flour instead of regular flour]. These tasted the most like bread that I've had since going GF, but we didn't LOVE them. Ben isn't used to the GF stuff either, so the flour gave him a tummy ache.
My final thoughts for the week:
- This is a learning process and I can't be too hard on myself. I will not succeed if it's constant pressure.
- I have definitely increased my water intake, but I'm not near the level I want to be at.
- I feel that my hand/feet spots are much less red in color as we get further into the process.
- I have lost eight pounds as of this morning.
- I really miss bagels.


The coming week contains my 27th birthday. I am going out to eat with Ben on Thursday [my actual birthday], and with my immediate family on Friday. I've done a lot of research on restaurants and their menus to try and be proactive.
