Muffin Pan Meatloaf

Today, I tried my hand at making muffin pan meatloaf. I found the idea on Pinterest, and tweeked it to use my own (my mom's) recipe!

Here's what you need to make this dish:

  • 1 T. Minced onion
  • 2 T. Worcestershire sauce
  • 1 T. Garlic pepper
  • 1/2 cup of smashed Crackers
  • 2 eggs
  • 1 lb ground beef
  • Ketchup (optional)










First, I combined all of my ingredients in a bowl. I used my hands to mix it all together - BEWARE, this mixture is gooey!
 

I sprayed cupcake pans with oil, and then scooped decent portions into each one. Additionally, I put ketchup on the top as a garnish. Then I popped these in the oven at 350 degrees for 50 minutes!


 Because I sprayed the pans, the meatloaf muffins popped right out! Yummy AND easy to make!

To go along with the muffins, I made cornbread and peppers! YAY, delicious dinners!
