I tried to be DOMESTIC

If you know me (or have read this blog at all), you know that I have a couple of skin diseases - one covering my hands. This situation makes it a little hard for me to be the cutesy little house "wife" that I will be in 5.5 months. It's kind of depressing actually, I used to cook a lot - if even just for me - and now it's hard because the heat irritates my skin! Anyway, I decided to get over the pain, wear some oven mitts, and make Ben dinner! Oh boy...

I went to the grocery store thinking I wanted to make something in the oven because that would be easiest. Okay! Meat counter! When I got to the meat counter I saw these really pretty Chicken Spiedini's - which is something Ben and I have never eaten together before... BINGO! I decided to serve it with pasta and sauteed red and yellow peppers!


Chicken spiedini is breaded chicken stuffed with asiago cheese. All I had to do was preheat the oven to 350 degrees, then bake it for 35 minutes! So easy (and YUMMY)!!!

The spaghetti, I cooked as I would normally cook pasta. We topped it with Virgin Olive Oil, Italian seasoning, and a bit of Parmesan cheese. [Side note: I did NOT serve the chicken over the pasta, but I think you could easily cut it up and do so!]

Lastly, the gorgeous peppers! These were on sale at Hyvee and Ben loves them, so I couldn't pass them up! I just cut 3 peppers (2 red, 1 yellow) into strips and put them in a frying pan - yes, a frying pan. I put probably 2-3 tablespoons of VOO in the pan, and topped the peppers with salt, pepper, and minced onion to season them! I cooked them on medium to low heat until they softened, then we turned them up to high heat to scorch them/give them a little bit of cooked/seared edge. Super easy and a colorful addition to the plate!

I'd say dinner was a success. Ben enjoyed the food (and not having to cook), and it was nice to do something like this for him!

Next time I may even try to prepare a meat that isn't pre-seasoned for me!
